It's not too often (see also, never) that I post a recipe on the blog. But when it's one that is this good and this bad for you I figure it might be worth your while. The recipe is from Taste of Home and is titled “Over the Top Blueberry Bread Pudding” and when they say over the top, they mean it.
I brought this over to my Friendsgiving party last weekend and it was a hit. It also might have to do with the fact that I add a little something something to the sauce. That something something is alcohol. Which we know makes everything better.
Ingredients:
3 eggs
4 cups heavy whipping cream (Yeah I told you, over the top)
2 cups sugar
3 teaspoons vanilla extract
2 cups fresh OR frozen blueberries
1 package (10-12 oz bag) white baking chips
1 loaf French Bread, cut into 1 inch cubes (about, who knows if I'm really cutting this into one inch cubes.)
Sauce (Remember Sauce is the Boss)
1 package (10-12 oz bad) white baking chips
1 cup heavy whipping cream
Optional: a dash of whiskey
What you do:
- Preheat oven to 350°. In a large bowl, combine eggs, cream, sugar and vanilla. Stir in blueberries and baking chips. Stir in bread cubes; let stand 15 minutes or until bread is softened.
- Transfer to a greased 13-in. x 9-in. baking dish. Bake, uncovered, 50-60 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving.
- For sauce, place baking chips in a small bowl. In a small saucepan, bring cream just to a boil. Pour over baking chips; whisk until smooth. Serve with bread pudding and a smile.
