When it's this hot outside I don't want to spend hours in the kitchen. I want something easy and delicious that I can make without feeling like I'm sweating in the kitchen. This is a simple recipe that Michael and I concocted last week and I wanted to share it with you.
Please note, this dish is best cooked while drinking wine. I can't exactly tell you why, it's just a fact. I paired this meal with the DIVINE Sequoia Grove Chardonnay. This
During these hot months I craze light, flaky fish and fresh greens. This recipe is super simple, but looks fancy and delicious. Since I just kind of threw this together, we'll called in Spiced Mahi Mahi with Aioli sauce.
Here's what you need:
2 Mahi Mahi (6-8 oz) fillets
1 tablespoon lemon juice
2 teaspoons diced shallot
1 teaspoon chopped garlic
1 teaspoon Dijon mustard
1 egg (see note)
2 tablespoons chopped basil leaves
2/3 cup olive oil
Pinch of Salt and Ground pepper
Honey, optional
To make the aioli, combine lemon juice, shallot, garlic, mustard and egg in a blender; process until mixed well. Add basil; blend for a few seconds to chop well. With blender running on low, add 2/3 cup olive oil in a slow stream. Add salt and pepper to taste. If aioli is too acidic, blend in honey to taste. Set aside.
Rub fish with olive oil, season to taste with salt and pepper. In a skillet or grill cook fish 4 minutes per side.
Add a dollup of aioli on the side.
We paired this with a fresh salad and strawberries and, of course, the Sequoia Grove Chardonnay.
