Happy Labor Day, or as the people I'm currently spending it with “LaBRO Day.” Lord help me. Since we have the day off from the real world, let's settle in with this delicious recipe post from the one and only Amanda of this Is my real hair. I'm hungry already. She introduced herself so well below I don't even have to do anything!

Hi, I am Amanda and I blog at this IS my real hair and I am really happy to meet you.
I blog about a lot of different [some might say random] things on a daily basis.
I rant ~~a lot~~, I post about traveling, I talk about my dog, my almost husband and friends.
really, everyday is a surprise for you to unwrap and enjoy. and don't you live surprises?
one thing that I post about often is getting healthy and with that sometimes recipes.
today I thought I would share with you one of my favorite recipes,
which also happens to be one of my most popular blog recipes ever.
it is easy, it is delicious and I would eat it everyday if I had the time.

Chicken Bruschetta Pasta

what you NEED:

– 4 large tomatoes

– 2 cloves of garlic

– 4 shallots

– 3 tbsp fresh basil

– 1/4 tsp kosher salt

– 1/4 tsp pepper

– drizzle of extra virgin olive oil

– 4 tbsp balsamic vinegar

– 2 boneless/skinless chicken breasts

– 1 box of angel hair pasta

HOW you make bruschetta:

1. wash and dry tomatoes. cut into quarters and remove seeds and juice.

also discard the stem area from the inside. then chop the tomatoes to a smaller size.

2. dice garlic and shallots.

3. combine tomatoes, garlic, shallots, and oil into bowl and mix.

4. add chopped basil and balsamic vinegar. add salt and pepper to taste.

5. mix thoroughly and set aside.

HOW you make bruschetta chicken pasta:

1. cook chicken (using whatever method you prefer. I cooked mine in a pan on the stove top)

2. boil pasta

3. mix pasta with bruschetta mixture

4. when chicken is finished cooking, let rest for 5 minutes under aluminum foil

5. after letting chicken rest, slice serve on top of past

6. eat!

and that is that. totally easy and totally delicious.
